Triple Vanilla Shortbread

Wondering why it is called triple vanilla? because it uses three vanilla products in a single recipe for the vanilla effect three times.


100g icing sugar
200g plain flour
100g cornflour
200g very soft butter
2 tsp Vanilla Bean Paste
Vanilla Syrup
Vanilla Sugar


Preheat the oven to 320°F.
Sieve icing sugar, flour and corn flour into a bowl. Add butter and Vanilla Paste. Mix until dough forms.
Tip onto a lightly corn floured bench and knead until smooth. Roll out and cookie-cut into circles.
Place slightly away from each other on a non-stick tray.
Bake for approximately 20 minutes or until starting to turn lightly golden.
While cookies are still hot, brush with Vanilla Syrup and sprinkle with Vanilla Sugar.
